Lucknow: The Amity School of Hospitality (ASH), Amity University Uttar Pradesh, Lucknow Campus, organised a National Workshop on “Art of Assorted Breads – From Loaves to Artisan Creations” on September 30, along with an MoU signing ceremony with Hotel Crowne Plaza by IHG, Lucknow, as part of the university’s Innovation Week celebrations.
The workshop was conducted by Chef Ajeet Savita, Pastry Sous Chef at Hotel Crowne Plaza, Lucknow, who provided participants with hands-on training in a wide range of baking and pastry-making techniques. The workshop covered artisan cookies, including Anzac, Red Velvet and Peanut Butter cookies; French pâtisserie, featuring macarons, almond croissants, Paris-Brest and pastry cream; cakes and desserts, including Orange Almond Cake; and specialty breads such as brioche, focaccia and sourdough. Participants gained practical exposure to preparation techniques, shaping, finishing and contemporary baking practices.
The Memorandum of Understanding (MoU) was signed by Dr. Ankit Chadha, Head of Institution, Amity School of Hospitality, and Shri Kapil Viz, General Manager, Hotel Crowne Plaza, Lucknow. Shri Alok Singh, HR Manager, and Shri Prince Singh, Learning and Quality Manager, from Crowne Plaza, along with Dr. Dharna Shukla, Faculty In-charge – Placements, were present on the occasion.
Prof. (Dr.) Anil Vashisht, Pro Vice Chancellor, Amity University Uttar Pradesh, Lucknow Campus, graced the event along with faculty members Chef Dr. Ranjeeta Tripathi, Chef Gaurav Tewari, Dr. Mukesh Shekhar, Dr. Nishi Priya, Dr. Dharna Shukla and Dr. Sujay Vikram Singh.
Students from IHM Lucknow, Lucknow University, Babu Banarasi Das University and Integral University also participated in the workshop, providing an opportunity for students from different institutions to exchange knowledge and gain practical insights into professional baking. The workshop and MoU signing marked a step towards strengthening industry–academia collaboration and providing students with greater exposure to industry practices and professional learning opportunities.
